Tasting Notes   This "white wine" from red grapes has rather more colour than the previous vintage, due to the drought induced colour intensity in the skins. It is better described as a "Rose". The process involved removal of free run juice at the crusher, then slow cold fermenting as a white wine. This handpicked and hand made wine may be enjoyed at any time, where a "white" may be considered.
 
Winemaking Notes   We chose the unusual step of using Cabernet Sauvignon to make this medium dry blush/white wine. This was achieved by removing the free run juice instantly from the skins at the crusher. Fermentation from then on was as for white wines, in an inert atmosphere at controlled cool temperature.

The wine has a wonderful mouth-feel with the background flavours of its source Cabernet Sauvignon.
