Tasting Notes for Butterfly Kiss Cabernet Sauvignon

Crafted from the finest parcels of fruit nurtured in our organic certified vineyard, these wines are made using environmentally sustainable farming and minimal intervention winemaking techniques. ENJOY WITH Moroccan lamb with rocket salad, Ossco Bucco with polenta & steamed greens

AROMA: Blackcurrant with subtle herbal and oak spices

PALATE: Blackberry, currant and spice with integrated oak and a velvety soft finish

WINEMAKING Cabernet Sauvignon and Merlot grapes from our organic vineyard were harvested in the warmth of the afternoon to assist fermentation and colour extraction. The fruit was fermented on skins for 7 days then gently pressed. The wine parcels underwent malolactic fermentation in French oak for several months with intermittent aerative movements to naturally preserve freshness and avoid reductive aromas. The wine was then blended, filtered and bottled.
