Tasting Notes for Cowpunk Natural Prosecco 2021 from the Winery

A really interesting Prosecco with vivid aromatics of citrus, hints of grilled nuts and yeasty nuances. The palate delivers a lemony freshness with a good phenolic grip and a nicely rounded mineral mouthfeel complemented by clean acids that finishes bone dry. Pair with salt cod croquettes.

Vineyards

Sourced from established vineyards high in the King Valley known for the production of quality Prosecco grapes. 

Winemaking

Picked in the cool of night, then the grapes were lightly pressed to extract the purest of juice that was then transferred to stainless steel tanks for fermentation and maturation. The wine was then transferred to bottle for re-fermentation and to sit on its yeast lees or ‘ColFondo’ - as it is known in Italy - to produce a traditional Prosecco style.

Vintage 2021

Thankfullya much better vintage than 2020 with both quality and quanity providing a great result for the region. Early rain in the season was followed by good dry conditions that held up through out the summer with much needed rainfall. Vintage remained warm ensuring fruit remained optimum for picking.
