Winemaking
The Sauvignon Blanc parcels were harvested when the fruit displayed 3 distinct flavour spectrums. The wine was fermented in three separate parcels with an early, mid and late pick. One of the parcels was wild fermented while the remaining 2 portions were seeded with yeast that we know produces excellent aromatics from our region.
