The cabernet has a sweet nose of mulberry’s and cassis/blackcurrant, with a hint of cedar from the oak. The wine has a amazing richness but also has a very fine grain palate, the wine finishes with a nice tannin grip.
The Story
The wines are made on site using small open ferementers, wild yeast and no preservative. They are basket pressed and matured in small oak casks for at least 18 months - fining or filtration is not necessary. The wine is bottle aged in their cellar prior to release when it is ready for consumption.
