This wine shows typical ripe plum and white pepper flavors which seem to be the signature of the site, and a luscious texture, giving it an immediate attractiveness and a lingering finish. This is a delicately-structured wine (i.e. not highly-extracted), yet with sufficient fruit acid for good balance and longevity.
The Story
The Le Puits Sec was fermented with our proprietary yeast after a 3-5 day maceration at 55 degrees Fahrenheit. Aging was done in 60 gal. François Frères oak (50% new) for 17-18 months. After a final blending, the wines were bottled without fining or filtration. It represents a blend of selected barrels within their respective vineyard sources.
