Estate grown at our Organic Vineyard on clay soils – these vines are naturally low-vigour and managed carefully with the aim of small amounts of concentrated bunches. Our vines are spur-pruned and entirely managed by hand with limited irrigation.

We slowly pressed Riesling bunches to tank before a brief settling pre fermentation. Partly fermented in old French puncheons this Riesling is complex, long and dry with the ability to age. This wine was fermented with only ‘wild’ yeasts, providing a long slow fermentation.
