Tasting notes from the winery for previous Vintage (2019) No Evil Organic Shiraz 

Nicely lifted and aromatically charged with red berry fruit aromas hints of vanilla fresh ground spices and ripe plums. Soft and seductive tannins help shape the wine yet the weight of fruit ensures it remains lithe and generous.The palate rewards with fruit vibrancy, nuanced spice and milk chocolate and a fine, integrated acidity drive a long enjoyable finish. The wine is looking great right now but will also age confidently with very careful cellaring for up to 5 years.

The See, Hear, Speak No Evil Organic wines are sourced from fully certified Organic vineyards and made using minimal additions. The wines are Organic, Vegan friendly and made to EU guidelines for minimal preservatives (less than 30ppm Free Sulphur. A new benchmark in affordable Organic Wines.

2020 Vintage: 2020 had its challenges with a dry start and only a small portion of rain and with much of the country suffering drought conditions. The warm dry spell continued in December with some extreme hot temperature days recorded. Thankfully due to one of the coolest January’s on record the vines were able to re-address the balance. It was a late ripening year and yields were down but despite the challenges it will be another excellent vintage across South Australia.

WINEMAKING: Sourced primarily from a mature, dry-grown vineyards in the McLaren flat sub district of McLaren Vale. The fruit is hand-harvested and sorted before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. Matured in seasoned French oak (30% new French) for ten months before bottling with minimal filtration and sulphur addition.
