This super-premium certified Organic wine is made specifically preservative free and vegan, driven organic passion and ‘raison d’être’. A deep purple colour with ruby hues. REGION: McLaren Vale
McLaren Vale is one of the great and oldest names of Australian wine. The birthplace of wine in South Australia, it lies just south of the capital city of Adelaide, offering multiplicity of soils and basking under an ideal Mediterranean climate.
VINTAGE & STYLE NOTES:
The Cabernet grapes were harvested from a certified organic and biodynamic vineyard, in the premium McLaren Vale region. At the winery they were partially crushed into a static fermenter and inoculated with an organic Bordeaux yeast strain to enhance the fruit characters and optimum fermentation. The juice was then pumped over skins for seven days for optimum extraction of flavour, tannins and colour before the grapes were dropped with the aid of gravity into the press and the wine pressed off into pristine stainless steel. Following malolactic fermentation in tank the finished wine was bottled early without finings or Sulphur Dioxide additions, to retain its freshness, vibrancy and its ‘preservative free’ warranty. Velvety smooth - drinking at its best now.
