Tasting notes for Organic Hill Preservative Free Cabernet Sauvignon 2016 from the winery:
Organic Hill Cabernet has a supple nutmeg nose, ample plum and berry flavours with gentle tannins, the palate is elegant with a pleasant persistent finish. The grapes reached full flavour two weeks after becoming sweet ripe, before harvesting early evening, maceration began mid-morning the next day, fermentation 24 hrs later, skins were plunged into the fermenting wine regularly, pressing occurred at 6 Be and the fermentation continued until sugar dry. Secondary fermentation [Malo] began soon after pressing.

"Believing all wine should be Organic at the least and Preservative Free where possible Organic Hill is all about building something better for the future that is not only about us and our children but also you and your future. Why would we choose to consume a product containing sulphites, pesticides, herbicides and god knows what else! For us this was an accidental discovery that we have come to not only love, but look for in all aspects of our life right down to growing our own organic vegetables with the kids.
