Redskins, fairly floss, jubes, it just keeps coming. Sour gummy bears hint at the juxtaposition of sweet and sour in this wine, all the while you are kept intrigued by the underlying white and Szechuan pepper mix. A bright and exhilarating palate, like riding a bike downhill with no hands for the first time, slowing to a crawl on soft green grass and the bottom of the descent. Smooth, just like the finish of this mouth-watering wine.
Tasting Notes for Paxton Graciano 2021 from the Winery
Graciano is a Spanish varietal grown primarily in the Rioja region. After some research David Paxton decided to graft one row of Graciano onto some old Chardonnay vines at Thomas Block to see what the result would be. When you try this wine, we think you will agree that the variety is well suited to the conditions of McLaren Vale.

Aroma: Like a Mary Poppins bag in a lolly shoppe on the coast of Cornwall, childhood favourites keep popping out of this wine. Redskins, fairly floss, jubes, it just keeps coming. Even a raspberry Sonny Boy on a sweet summer’s day. Sour gummy bears hint at the juxtaposition of sweet and sour in this wine, all the while you are kept intrigued by the underlying white and Szechuan pepper mix.
Palate: What you smell is what you get here as the nose perfectly integrates into the palate. Bright and exhilarating like riding a bike downhill with no hands for the first time, slowing to a crawl on soft green grass and the bottom of the descent. Smooth, just like the finish of this mouth-watering wine.
Vintage
2021 was one of those dream vintages that don’t come along every year; cool, refreshing nights and dreamy, sun-kissed days without any extended stretches of intense heat. After a warmer than usual November there were only four days above 40 degrees. It was mainly dry throughout the ripening season with the odd spattering of just enough rain to keep the grapes beautifully plump, juicy and full of bright fruit flavours and time to dry out in between so disease pressure was low. The gentle undulation between these varying temperatures and perfectly healthy canopies allowed us to really ponder picking times, spending plenty of time out in the vineyard tasting grapes getting the timing of picking just right. The generous harvest has rewarded us with delightfully delicate fruit and varietal characters, with each variety singing its own tune. Natural acids are in perfect balance and the smooth, sensuous tannins completed by an epic energetic vibration that we can’t wait to share with you.
Vinification
A cool vineyard and a late ripening variety mean this wine is fermented in open fermenters at cool temperatures at the end of March. Lovingly hand plunged and tasted daily, waiting for the moment it all comes together. Malolactic fermentation in used French oak puncheons and aged there for 7 months before blending and encapsulating the delicious flavour in bottle.
