This is McLaren Vale Shiraz at its finest. From the acclaimed ‘Jones Block’, this wine is well regarded for its generous, yet elegant style. A small parcel was selected from our century old vines for complex fruit flavours and seamless structure. Grapes are hand pruned; wine is aged in fine grained French and American oak. As always, no corners cut. A rich, savoury and spicy blend, this wine has a fleshy middle palate and great length. Enjoyed with food, a glass or three of Paxton is certain to spice up the evening.

CELLARING: This wine can be enjoyed young, however careful cellaring for 10-30 years will be rewarded.
VINTAGE: 2017 was a fantastic year for winemaking in McLaren Vale. We had an extremely wet winter and our vineyards reached full saturation point. Spring brought very consistent fruit set and flowering. The rain continued throughout summer and mild days with cool nights allowed for a slow ripening season. These conditions resulted in fragrant whites with lower acidity, and elegant reds with very attractive primary fruit flavours and lower alcohols.
VINIFICATION: Hand picked at optimum sugar and flavour equilibrium, the grapes were kept on skins for 15 days. The ferment was pumped over and plunged twice a day to extract colour, flavour and tannin structure. Once pressed, we used a combination of French and American oak barriques (40% new) for maturation of up to 22 months prior to blending and bottling. This wine was cellared for a further 6 months prior to release.
