Pale straw in colour, The Paxton Guesser White is a great biodynamic white wine blend from McLaren Vale. The blend is changed each year as the Paxton folk pick out the varieties that are showing bright fruit driven characters. For 2015 we have a duo of Savagnin and Sauvignon Blanc.
On the nose there are some citrus hints and tropical fruit. The palate is light and fresh and delivers what is promised with an salad of fresh fruit, before finishing dry.
The Story
David Paxton believes that the people who apply the art and science of viticulture are just as important as the winemaker in the making of good wines. That’s why for three decades the Paxtons have nurtured their prized vineyards – some over 100 years old – in McLaren Vale, South Australia. It’s this level of care and passion for the region that has produced extraordinary fruit and wines.

VINTAGE: 2015 Vintage was one of the shortest and earliest ever recorded in McLaren Vale. Up until February we experienced one of the coolest and driest summer since 1980. However, February warmed up and we saw early ripening of the grapes. This early ripening together with long periods of no rain made for an outstanding harvest resulting in fantastic colour and intense flavours. A great year for red and white varieties.
VINIFICATION Harvested at night when the sugar and acid equilibrium was at it’s optimum. Whole berry press to capture the beautiful soft fruit flavours. Post press we settle the juice and rack off the clear free run. The wine was fermented between 12-16 degrees celsius in stainless steal vats, without any sulfur additions until the end of fermentation. Light filtration and early bottling has helped enhance the lovely soft and fruit driven wine.
