The Story
Winemaking: The fruit was crushed and de-stemmed and transferred to open fermenters. After a period of cold maceration for 4 days the juice was inoculated for fermentation. Regular hand plunging over 10 days was carried out in the winery. The fermenting juice was then transferred into a mixture of French and American oak barriques for maturation and to wait for secondary fermentation in the spring before bottling in the new year.
Sulphur: This wine is made with minimal levels of sulphur/SO2/preservative 220.
Vegan: This wine is suitable for vegan diets.
Alcohol: 13.5%
Residual Sugar: Dry
