This Sauvignon Blanc displays passionfruit and herbaceous bouquets. Fresh aromas of grapefruits and gooseberries jump from the glass. Intense herbal scents of asparagus and green pepper combine with fine aromas of gooseberries. Good body, a seriously well textured wine offering quenching, flinty mineral complexity. The mouthfeel is rich, finely textured with tropical fruit, heaps more of those ripe gooseberries, and some seriously complex citrus, limes, marmalade and cumquats.This medium to full bodied wine offers loads of personality within it's lemon and lime grapefruity palate, further distinguished by crunchy grape filled characters. A distinct creamyness and persistent acidity enhances the dreamy palate
The Story
The fruit from the different vineyard blocks were all whole-cluster pressed and then fermented separately so that we had a great range of options when creating the final blend.
Indigenous yeasts and a selection of cultured yeasts were utilised for fermentation, for added complexity and texture. A small percentage of the blend (approximately 10%) were fermented in older French barriques to add depth, which when combined with regular batonnage, contributes a yeasty creaminess to fill the mid-palate. The indigenous yeast, barrel-fermentation, and extended lees contact are all used to contribute complexity, texture, and integration to this wine.
