ROSEHIPS – PLUM – SPICE
This Veneto grown, organic and vegan-certified Merlot is made without added sulphur, made with hand selected grapes, and fermented on skins with low-sulphur dioxide producing yeast at 25°C in temperature-controlled stainless steel. Heady aromatics of Turkish spice market, lavender, rosehips, bergamot follow on the palate with ripe blood plum, panforte, bay leaf, with fine, linear acidity and soft fruit tannins.
Tasting Notes for Settimo Podere Merlot from the Winery
Dark red color tending to purplish. Full-bodied bouquet with delicate hints of red berry fruit. Velvety, soft and harmonious wine, rightly tannic.
Winemaker's Notes
Classic red vinification without the addition of sulfur dioxide. The healthiest Merlot grapes are selected. Fermentation is activated through selected low sulfur dioxide-producing yeasts and takes place with the skins at a temperature of 25°C for a week. Subsequently the wine is filtered in a sterile way and stored in tanks at a controlled temperature to avoid possible oxidation.

Total acidity: around 5.3 gr/lt
So2: <10 mg/lt. No added sulphites wine.
Serving temperature: to be served at 14°C-16°C
Food pairing: ideal with typical Venetian cuisine appetizers, with aged cheeses and tasty first courses.
