2014 Cabernet Merlot Preservative Free

LANGHORNE CREEK, EDEN VALLEY & LOXTON VINEYARD

All the fruit for the 2014 vintage Cabernet Merlot was sourced from the Temple Bruer certified organic vineyards in Langhorne Creek, Eden Valley and Loxton.

WINEMAKING
The grapes were picked from mid March in Langhorne creek and early April in Eden Valley. After crushing, the must was fermented at a temperature range of 17-20° C. The wine was pressed between 1.0 and 3.0° Be`, all the pressings were included with the free run wine. French oak tank staves were added and left in for 10 weeks, and malolactic fermentation was encouraged. At the completion of MLF the wine was carefully racked to avoid oxidation. The wine was bottled on the 9th July 2014. No sulphur Dioxide is added at any point in any process. The wine is bottled with intentional spritz to retain freshness.

TASTING NOTES
COLOUR Deep red.
AROMA Abundant fruit characters of blackcurrant and cherry.
FLAVOUR Vanilla and spice with firm, fine tannins.
