2015 Cabernet Merlot Preservative Free

LANGHORNE CREEK, EDEN VALLEY & LOXTON

VINEYARD The fruit for this wine was sourced from our certi? ed organic vineyards in diverse regions throughout South Australia, It’s complexity is in part due to Temple Bruer’s commitment to growing organic fruit in many regions including Langhorne Creek, Eden Valley, Loxton and McLaren Vale. In all of our vineyards we work towards improving vine health through the use of estate made compost, creating balance in the vineyard and mindfully using water to achieve outstanding fruit quality while caring for our environment.

WINEMAKING Picking commenced during mid March into late April, parcels were crushed and fermented separately with temperatures ranging from 17-20 degrees C. The wine was pressed between 1.0 and 3.0 Be’, all the pressings were included with the free run wine. French oak tank staves were used to further complex the wine while malolactic fermentation was encouraged. The wine was then carefully racked, blended and bottled in the year of vintage to avoid oxidation. No sulphur dioxide has been added to this wine at any point during winemaking or bottling.

TASTING NOTES

COLOUR Deep red with purple hue.

AROMA Showing fresh blackcurrant and cherry on the nose with hints of earth and spice.

FLAVOUR The palate full and fruit driven, with medium weight and a ?ne, yet ?rm tannin structure.
