Tasting Notes for Temple Bruer Preservative Free Cuvee Brut 2021 from the Winery
A nose lifted with yellow and green apples, pears coconut and lime. Followed with a palate of jasmine, passionfruit and green figs. Balanced with notes of lemon curd and quince. The palate has a chalky texture followed by a high acid line. The bubble is tight, firm and persistent which enhances the texture and delicate fruit of this wine.
2021 Vintage
With a moderately wet spring and early growing season the conditions were excellent for flowering and fruit set across multiple regions in South Australia. The 2021 vintage and the later growing season was very cool and dry, which led to slower ripening over the season and low disease pressure. A slow and mild ripening period meant natural acidity, concentrated fruit flavor and fine tannins were seen from Temple Bruer vineyards. As a result of conditions yields across the vineyards were also high. Picking began in late January in McLaren Vale and fi nished in May with Eden Valley.
Vineyard
This Chenin Blanc comes from Temple Bruer’s Vineyard in Langhorne Creek. The Langhorne Creek property was Temple Bruer’s first vineyard. The vineyard was planted from 1981 and the Chenin Blanc was planted in 1996. In 2016 it had some light redevelopment work called cordon renewal, where new cordons (arms) are taken out on the wire. This is to ensure vine health and also to ensure vine balance as the vine ages. Chenin Blanc is suited to Langhorne Creek as it has high acid and can withstand some warmer summer days but it cools down rapidly at night due to the cooling effects of lake Alexandrina (‘The lake doctor’), where acid and complexity of Chenin Blanc aromas and flavors are protected with cool nighttime temperatures.
The vineyard at Langhorne creek has fertile soils and are predominantly deep, alluvial sandy loams with self-mulching clays.
Winemaking
The Chenin Blanc was picked early morning at a sugar level of 10.4 Baume on the 18th March 2021. The grapes were then cooled further and pressed where only the free run was used for this wine.
The juice was cold settled for two days, racked and inoculated and fermentation commenced. Fermentation lasted for 3.5 weeks at 13˚C. The wine then went through Malolactic fermentation. It was then left on lees for an extended period to provide and increase texture into the wine. It was then sparkled to 4.5 g/l C02 and bottled in mid-July 2021. No Sulphur dioxide was used at any point.
