2015 Preservative Free Shiraz 

LANGHORNE CREEK & LOXTON VINEYARD

The grapes were picked from the end of February until the beginning of April. The temperatures were warm to hot at the beginning of the season, and then cooled down towards the beginning of March which saw some of the Eden Valley fruit ripen slowly with intense fruit fl avour which is transferred into this wine.

WINEMAKING

After gentle crushing the three separate parcels were fermented separately and the musts were fermented at a temperature range of 16 - 20° C. The wine was pressed early to ensure maximum fruit fl avour and early drinkability. The Ferment fi nished and was matured with minimal handling to maintain freshness and prevent oxidation. A combination of French and American oak was used to enhance complexity of this wine and it was bottled on the 30th June 2015. No sulphur Dioxide was added during the making of this wine. The wine is bottled with intentional spritz to retain freshness.

TASTING NOTES

COLOUR Dark red.
AROMA Blackberries, spice and peppercorns with a dark chocolate overtone.
FLAVOUR A medium bodied wine with lots of primary fruit fl avour of cherry, cloves and cinnamon on the palate with beautifully balanced toasty oak and fine soft tannins.
