- Wild (Natural) Yeast Fermentation
Winery/Brand: Temple Bruer
The wine is light in colour. Fresh lemon and lime flavours lead the nose, with citrus notes flowing onto the palate carried by well structured acidity reminiscent of lemon and pineapple fruit. The wine develops into a softer finish of medium to long length with hints of stone-fruit.
The Story
The fruit used to create this wine was sourced from Temple Bruer’s Eden Valley vineyard. Harvest was undertaken in two parcels over consecutive nights before blending the clear juice. Alcoholic fermentation commenced slowly under cool conditions to retain fruit flavour.
