A complex style of wine reflecting the fact that the fruit was sourced from multiple vineyards across the Central Ranges. The different parcels of fruit were all handled separately and fermented in open vats, and were given an extended period on skins to impart extra structure and to add mid pallet sweetness. Following this extended maceration the multiple parcels of fruit were matured separately in two and three year old French oak hogsheads for 18 months, before being brought together before bottling. After a light fining and filtration, the final blend was then bottled at the beginning of August.
The Story
Colour and Aroma: Deep purple red, with lifted blackberry, spice and violet characters on the nose.
Flavour: The palate is immaculately structured and balanced, with blueberry, redcurrant and licorice flavours, leading to a long savoury finish.
Cellaring: 6 years
Food Match: Perfect with barbequed butterflied leg of lamb, or an aged scotch fillet.
