Un-oaked organic white blend made from organically grown Bindoon Chenin Blanc and Chardonnay fruit. Juice was naturally clarified and fermented cool in refrigerated stainless steel tanks with added yeast culture, all for the aim of preserving and lifting the fresh fruit characters of the varieties. Wine was allowed to mature on yeast lees for 2 months post fermentation before racking and filtration, adding to the richness of the palate.
